Simple Fried Red/Green Tomatoes with 

Sour Cream & Prosciutto Ham


  • 1/2 cup white flour 3 eggs, beaten
  • 2/3 cup Panko ( Japanese sweet) bread crumbs
  • 3 firm ripe tomatoes, not soft
  • 1/4 cup olive oil
  • 2 teaspoons of butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Garnish (Your Call) 

  • A generous portion of sour cream
  • 3 slices Prosciutto, or Hormel bacon fried till crisp
  • Chives, finely chopped
  • Parmigiano Reggiano



  • Cut tomatoes into ½ inch slices and sprinkle with coarse salt & cracked black pepper.
  • Place flour, eggs, and crumbs in separate shallow dredge 
  • Heat oil with butter in a medium size skillet on medium heat.
  • Dip tomato slices in flour, then eggs, then crumbs.
  • In the pan, fry half the coated slices at a time for about 3 to 4 minutes per side or until golden brown.
  • Remove to a serving tray. 
  • Garnish with a generous portion of sour cream, crumbled crisp prosciutto or bacon bits and a sprinkle of minced, fresh chives and /or Parmigiano Reggiano cheese
